I make a version of this summer salad every year. It's delicious with added chickpeas too, or you could also throw in a cup of cooked Farro or Wheat Berries. It's best enjoyed right away. Make a big jar of the dressing and enjoy with leafy greens all summer.
Herbed Cucumber Tomato Salad
4 mini cucumbers (1/2 pound)
1/2 pint cherry tomatoes, halved
1 cup shelled fresh English peas
1 bunch cilantro, minced
1 bunch parsley, minced
150g feta, cubed
Dressing
1/3 cup olive oil
1/3 cup white wine vinegar
1 tsp salt
1/4 cup nutritional yeast
1 tbsp maple syrup
1 shallot, minced
Prepare all the salad ingredients and add to a mixing bowl. In a small jar, combine the dressing ingredients and shake well. Drizzle the dressing overtop of the vegetables and mix well. Serve right away. Serves 4 as a side.
