Spectacular Sunshine Dressing

Hey friends! First of all, I have to acknowledge it's been a little while. I hope you are all enjoying the spring in those parts where it's arrived, and it's still hard to believe here in the PNW that many areas of the globe are still covered in snow. Our front yard is now exploding with spring beauty, including a few baby seedlings planted in my first vegetable garden, which I can't wait to write and share about this year! It's not been for lack of wanting that I have not posted, but for a few small things that have been coming between me and this space that I so enjoy being a part of (hmmmm, work, work, work, and more work). You may be thinking you have seen this post before, or at least the dressing recipe, and it's true - you have.

I haven't had the time or mental space to share it yet, but the past month brought along a few major personal life challenges - you know the kind of bizarre happenings that make you think the world is plotting against you? Yeah, those types. The types that can either destroy you, or make you simply throw your hands up and say, "WTF"? The hardcore-not-messing-around-let's-see-what-you-are-made-of testing times we all go through at one time or another. Well, it's been that kind of a month for me, including a light blog hack and all that (I have learned) goes with it. Thankfully it was caught right away, and I've been working with the great folks at Sitelock to get everything cleaned up and to make sure it never, ever, happens again. They've been amazing, but unfortunately there are a few posts which are gone forever, unless I re-post them entirely from scratch (thankfully only a couple and at first I thought I'd lost a good part of my last 4 months work).

Thanks to my amazing readers, I know which one needs to be re-posted first, as it's just not like me to go back and bring up stuff from the past. I've learned that this delicious Sunshine Dressing must be re-published and shared above all else for sure! In addition to this, I've got some real goodies to share with you coming up. I've really missed the outlet that is blogging for me and look forward to getting back into the swing of things. It can't stay this intense forever! Surely the universe will let up, and thankfully it seems, it already has some. Thanks to all of you who've written to inquire about these recipes…..and my deepest apologies for the annoyance! It just seems to be a 'thing' right now in my corner of the world. But not for long, cause I'm rising above ---- and still eating salad with this (incredible) dressing. Credit goes to my mom on this one, as I found this little gem tucked in her ancient recipe book on my last trip home.

The world can't be that against me if it led to me to this, can it? And plus, the sun is still shining and it could sure be a lot worse. Chin up in these times. Chin up! I'm winning this one, it just takes time! ;) xo

Spectacular Sunshine Dressing:

  • (1) cup olive oil
  • (1/3) cup honey
  • (1/3) cup white miso
  • (2) tbsp tamari or soy sauce
  • (2) tbsp rice vinegar or apple cider vinegar
  • (1/2) medium shallot, minced
  • (1/3-2/3) cup water, depending on desired consistency

Combine all ingredients in a blender and blend until smooth and creamy. Enjoy on all manner of things from cooked grains to fresh greens. This dressing goes with everything, and everyone loves it. Enjoy!
